It’s the most historic version of the sparkling wine born of these hills, handed down from generation to generation. In this case, fermentation takes place in a natural manner. The wine, bottled in the spring, ferments after a long time in the bottle. The sediment that it generates on the bottom, gives particular organoleptic properties, such as bread crust, due to the yeasts present. Decanting in a carafe is recommended to allow it to oxygenate and to taste it at its best.

Presentation: Due to its natural fermentation in-bottle, this wine develops particular characteristics. The aroma is dominated by notes of yeast, bread crust and ripe yellow fruit, and it is dry and pleasantly savoury in the mouth.

Pairings: Also ideal for some dishes of Trevigiana cuisine, such as radicchio risotto, fish or seasonal vegetables. It’s natural characteristics of freshness, low alcohol and pleasing perlage make it a “non plus ultra” for connoisseurs.
Serving temperature: Serve at 8-10°C, preferably in a carafe to separate the naturally deposited yeasts on the bottom and to allow it to oxygenate.
Store in a cool area (12-18°C), away from direct light, in a vertical position.
