The grapes of this sparkling wine come from the vineyard near our cellar, at more than 400 metres above sea level. The summertime temperature differential between day and night in these hills lets the grapes maintain unmistakable notes of acidity that carry fresh aromas like just-harvested apples and crisp pears. The name “Cruo” means raw in our dialect, and it’s tart because it is a unique niche wine with no residual sugars. Even when paired with shellfish or raw fish, it delivers perfect combinations.
resentation: Straw yellow colour, completely dry flavour, but also velvety and full bodied with standout floral notes of wisteria and acacia accompanied by scents of fresh fruit like white peach and pear.

Serving temperature: Serve at 6-8°C. Pairings: Ideal as an aperitif and with social moments, to accompany raw fish, seafood and sushi.
